(snap) beans (400 g/14
oz)

1 liter/1 3/4
pints (4 1/2 cups) vegetable stock
(broth)

2 teaspoons
balsamic vinegar

salt

white pepper

Serves 4
Method:

Peel and slice the onions and garlic. Peel the
tomatoes and cut into bite-sized pieces.

Heat the oil in a large saucepan and lightly fry
the onions and garlic.
Stir in the tomato ketchup. Add the chopped
tomatoes and fry briefly.

Drain the green (snap) beans and add to the
stew. Add the vegetable stock (broth) and season
with vinegar, salt and pepper.

Add the savory
and bring the mixture to the boil. Reduce the
heat and simmer for about
30
minutes, stirring now and again.

When the stew is cooked, remove the savory and
season to taste.
Note:
This green (snap) bean and tomato stew is very
nourishing and an ideal winter dish. The fragrance
of the savory which develops during the cooking
makes this dish particularly heart-warming on a cold
winter's day.
