Ingredients

3 shallots

vegetable oil

500 g/18 oz ripe tomatoes

750 ml/1 1/4 pints (3

cups)

vegetable stock
(broth)

25 g/1 oz (2
tablespoons) butter
-
1 tablespoon flour
-
100 g/3 1/2 oz
crème fraiche
-
salt
-
pepper
-
sugar

Method:

Coarsely chop the
shallots. Heat the oil in large saucepan and sweat
the chopped shallots. Put one tablespoon aside for
the garnish.

Cut the
tomatoes into four, remove the seeds and add to the
shallots in the saucepan. Cook briefly while
stirring continuously.

Add the vegetable stock
(broth) and simmer for about 20 minutes. Strain the
soup through a sieve and put to one side.

Melt the butter in a
large saucepan, carefully add
the flour and stir vigorously with a whisk. Next add
the soup liquid little by little making sure there
are no lumps.

Stir the
crème fraiche into the tomato soup. Season to taste.
Note:
This
delicious
tomato soup is ideal as a starter (appetizer), a
snack or a light
evening meal.
