Black Bean in Mango Sauce 

Ingredients

 

Serve 6-8

  • 8 oz/250 g dried black beans, soaked overnight and drained

  • 1 quart/1liter boiling water

  • 4 bay leaves

  • 10 oz/300 g mango, peeled and cut into cubes

  • 1 tbsp lemon juice

  • 1 tbsp orange juice

  • 1 tbsp maple syrup

  • 3 tbsp finely chopped cilantro/ coriander

  • salt and freshly ground black pepper to taste

  • 1 tbsp fresh lime juice

  • wheat tortillas, to serve


Method:

  1. Place the beans in a large saucepan with enough water to cover and bring to a boil over low heat. Remove from the heat and let soak for 2 hours. Drain.

  2. Pour in the boiling water and add the bay leaves. Bring to a boil and simmer over low heat for 1 hour 15 minutes, or until the beans are tender.

  3. Drain and discard the bay leaves. Let cool completely.

  4. Mix the beans, mango, lemon and orange juices, maple syrup, and cilantro in a large bowl. Season with salt and pepper.

  5. Drizzle with the lime juice and refrigerate until ready to serve. Serve with freshly made tortillas.
