Boats with Herb Mayonnaise

 

Ingredients

 

Serve 6

  • 1 quantity Short Crust Pastry (refer recipe)

  • 2 hard-boiled eggs, peeled and chopped

  • 2 tbsp finely chopped parsley and marjoram

  • 2 tbsp finely chopped marjoram

  • 1 cup/250 ml mayonnaise


Method:

  1. Prepare the pastry and chill for 30 minutes.

  2. Preheat the oven to 350°F/180°C/gas 4. Oil about 12 small boat- (or other-) pastry molds.

  3. Roll the pastry out and use it to line the molds. Prick well with a fork.

  4. Bake for 12-15 minutes, or until golden brown. Turn out carefully onto a rack and let cool completely.

  5. Place the eggs in a bowl and mix with the parsley, marjoram, and mayonnaise. Fill the shells with the sauce.

  6. Serve immediately before the shells have time to become soggy.
