Boats with Herb
Mayonnaise

1 quantity Short Crust Pastry (refer
recipe)

2 hard-boiled eggs,
peeled and chopped

2 tbsp finely chopped
parsley and marjoram
-
2 tbsp finely chopped marjoram
-
1 cup/250 ml mayonnaise
Method:

Prepare
the pastry and chill for 30 minutes.

Preheat the oven to 350°F/180°C/gas 4. Oil about 12
small boat- (or other-) pastry molds.

Roll the pastry out and use it to line the molds.
Prick well with a fork.

Bake for 12-15 minutes, or until golden brown. Turn out
carefully onto a rack and let cool completely.

Place the eggs in a bowl and mix with the parsley,
marjoram, and
mayonnaise.
Fill the shells with the sauce.

Serve immediately before the shells have time to become
soggy.
