Crostini with Mushroom Cream

 

Ingredients

 

Serve 4

  • 10 oz/300 g white mushrooms, finely sliced

  • 2 cloves garlic, finely chopped

  • 4-6 tbsp extra-virgin olive oil

  • 2/3 cup/150 g fresh creamy cheese

  • salt to taste

  • 4-8 slices toasted bread


Method:

  1. Sauté the mushrooms and garlic in 2 tbsp of oil in a frying pan over medium heat for 7-10 minutes, or until the mushrooms are tender and the cooking juices they release have evaporated.

  2. Transfer the mushrooms to a food processor or blender with the cheese and enough of the remaining oil to make a smooth cream.

  3. Season with salt and refrigerate for 30 minutes. Spread the cream over the toasted bread and serve.
