Easy Potato Knishes

 

Ingredients

 

Serve 4-6

  • 6 large potatoes, peeled

  • 6 eggs, lightly beaten

  • salt and freshly ground white pepper to taste

  • 6 tbsp potato starch


Method:

  1. Cook the potatoes in salted, boiling water for about 25 minutes, or until tender.

  2. Preheat the oven to 350°F/180°C/gas 4. Butter a large baking sheet.

  3. Drain and transfer the potatoes to a large bowl and mash well until smooth. Add the eggs, beating until well blended. Season with salt and pepper.

  4. Stir in the potato starch. The mixture should be dry enough to shape into balls with your hands, adding more starch if needed.

  5. Arrange the knishes on the prepared baking sheet. Bake for about 45 minutes, or until golden brown. Serve warm.
