Fava Bean and Cheese Bruschette

 

Ingredients

 

Serve 2

  • 4 oz/125 g frozen fava/broad beans, thawed

  • 2 tbsp olive oil

  • 1 tbsp fresh lemon juice

  • 1 spring dill, finely chopped

  • salt and freshly ground black pepper to taste

  • 2-4 slices firm-textured bread

  • 3 oz/90 g Camembert cheese, sliced


Method:

  1. Cook the fava beans in a large pot of salted, boiling water for 5-10 minutes until tender.

  2. Drain and transfer to a large bowl. Add 1 tbsp of oil, lemon juice, dill, salt and pepper.

  3. Toast the bread on both sides until golden and crisp. Drizzle with the remaining oil. Spoon the bean mixture onto the bruschette.

  4. Top with the Camembert and broil (grill) for 2-3 minutes or until the cheese is melted. Serve hot.
