Flatbread with Garlic and Herb Cheese

 

Ingredients

 

Serve 4

  • 1/2 quantity Italian flatbread dough (refer recipe)

  • 1 bunch parsley

  • 4 tender celery leaves

  • 1 large spring basil

  • 3 cloves garlic, finely chopped

  • salt and freshly ground black pepper to taste

  • 2-3 tbsp extra-virgin olive oil

  • 3/4 cup/180 g soft goat's cheese

  • 1 tbsp fresh lemon juice (optional)

  • 1 tbsp butter


Method:

  1. Prepare the flatbread dough. Knead and divide into 4 pieces. Shape each piece into a ball.

  2. Chop the parsley, celery leaves, and basil in a food processor. Add the garlic, salt and pepper, and 2-3 tbsp of oil and chop until smooth.

  3. Place the goat's cheese in a large bowl and stir in the ground herbs to make a soft green cream. Add the lemon juice, if liked.

  4. Roll out each piece of dough to about 6-7 inches (15-18cm) in diameter.

  5. Cook on a cast-iron griddle until bubbles appear on the surface.

  6. Spread each flatbread with herb cheese, season with pepper and serve.
