Flatbread with
Garlic and Herb Cheese
Ingredients

1/2 quantity Italian
flatbread dough (refer recipe)

1 bunch parsley
-
4 tender celery leaves
-
1 large spring basil
-
3 cloves garlic, finely
chopped
-
salt and freshly ground
black pepper to taste

2-3 tbsp extra-virgin olive
oil
-
3/4 cup/180 g soft goat's
cheese
-
1 tbsp fresh lemon juice
(optional)

1 tbsp butter
Method:

Prepare the
flatbread dough. Knead and divide into 4 pieces.
Shape each piece into a ball.

Chop the
parsley, celery leaves, and basil in a food
processor. Add the garlic, salt and pepper, and
2-3 tbsp of oil and chop until smooth.

Place the
goat's cheese in a large bowl and stir in the
ground herbs to make a soft green cream. Add the
lemon juice, if liked.

Roll out each
piece of dough to about 6-7 inches (15-18cm) in
diameter.

Cook on a
cast-iron griddle until bubbles appear on the
surface.

Spread each
flatbread with herb cheese, season with pepper
and serve.
