Focaccia with Cherry Tomatoes and Basil

 

Ingredients

 

Serve 4

  • 1 quantity Focaccia Dough (refer recipe)

  • 12 oz/350 g cherry tomatoes, cut it half and seeded

  • 2-4 tbsp extra-virgin olive oil

  • salt and freshly ground black pepper to taste

  • fresh basil, to garnish


Method:

  1. Prepare the focaccia dough and set aside to rise. Preheat the oven to 400°F/200°C/gas 6.

  2. Oil a rectangular baking pan about 10x15 inches (25x38cm) in size. When the rising time has elapsed, use your fingertips to press the dough into the baking pan.

  3. Place the tomatoes on top, cut side up, pressing them into the dough. Drizzle with half the oil. Season with salt and pepper.

  4. Bake for 15-20 minutes, or until the focaccia is golden. Drizzle with the remaining oil and garnish with the basil.

  5. Let cool, then cut into triangles. Serve hot or at room temperature.
