Fresh Cheese and Zucchini Baguette

 

Ingredients

 

Serve 2

  • 1/2 zucchini/courgette, thinly sliced lengthwise

  • 1 tbsp extra-virgin olive oil

  • salt and freshly ground black pepper to taste

  • 1 long French-style baguette

  • 1/2 cup/125 g fresh creamy goat's cheese

  • 2 tomatoes, thinly sliced

  • 6 oz/180 g smoked Provolone (or other) cheese, thinly sliced


Method:

  1. Heat a grill pan over medium heat and arrange the zucchini slices on top. Season with salt and pepper. Cook until the zucchini are tender on both sides, about 10 minutes.

  2. Cut the baguette in half lengthwise. place the baguette halves on the grill pan until lightly toasted.

  3. Spread with the goat's cheese and arrange the tomatoes, Provolone cheese and zucchini on top. Season with salt and pepper.

  4. Press the two halves of the baguette together to make a sandwich.
