Raita
Ingredients

1/2 cucumber, diced

1 small onion, diced
-
1 boiled potato, diced
-
3 tomatoes, diced
-
3 1/2 oz/100 g radishes,
finely chopped

2 stalks celery, finely
chopped
-
1 1/4 cups/310 ml thick
creamy yogurt
-
salt and freshly ground
black pepper to taste

1 sprig parsley, to garnish
Method:

Place the
cucumber, onion, potato, tomatoes, and celery in
a medium bowl. Stir in the yogurt. Season with
salt and pepper.

Chill in the
refrigerator for at least 1 hour.

Garnish with
the parsley and serve with toast of fresh bread.
