Fresh Vegetable Raita

 

Ingredients

 

Serve 4

  • 1/2 cucumber, diced

  • 1 small onion, diced

  • 1 boiled potato, diced

  • 3 tomatoes, diced

  • 3 1/2 oz/100 g radishes, finely chopped

  • 2 stalks celery, finely chopped

  • 1 1/4 cups/310 ml thick creamy yogurt

  • salt and freshly ground black pepper to taste

  • 1 sprig parsley, to garnish


Method:

  1. Place the cucumber, onion, potato, tomatoes, and celery in a medium bowl. Stir in the yogurt. Season with salt and pepper.

  2. Chill in the refrigerator for at least 1 hour.

  3. Garnish with the parsley and serve with toast of fresh bread.
