Cheese Pie

3 eggs, lightly beaten
2 cups/500 ml plain yogurt
1 lb/500 g Feta cheese, crumbled
2/3 cup/180 ml extra-virgin olive oil
salt to taste
12 sheets frozen phyllo dough,
thawed
Method:
Preheat
the oven to 350°F/180°C/gas 4.
Line
a 9-inch (23-cm) square baking pan with waxed paper.
Brush with oil.
Mix the eggs, yogurt, Feta, and 4 tablespoons of
oil in a large bowl until well blended. Season with
salt.
Layout the sheets of phyllo dough and cover with a damp
cloth.
Place
4
phyllo sheets in the prepared pan, brushing each sheet
with oil and allowing the dough to drape over the sides
of the pan.
Spoon half the cheese mixture into the pan.
Cover with another 4
phyllo sheets, each brushed with oil,
trimming to fit the pan.
Spoon the remaining
cheese mixture into the pan.
Fold the overlapping
dough over the top.
Cover with the remaining
4
phyllo sheets, each brushed with oil.
Prick all over with a fork.
Bake for
25-30
minutes, or until golden brown.
Serve hot or at room temperature.
