Mini Pizzas with Shallot and Herb

 

Ingredients

 

Serve 4-8

  • 1 quantity Pizza Dough (refer recipe)

  • 12 shallots, finely chopped

  • 1/2 cup/125 ml water

  • 1/2 cup/125 ml white wine vinegar

  • 5 tbsp extra-virgin olive oil

  • salt and freshly ground black pepper to taste

  • 1-2 tbsp dried mixed herbs (marjoram, rosemary, and thyme)


Method:

  1. Prepare the pizza dough and set aside to rise. Soak the shallots in the water and vinegar for 15 minutes. Drain well.

  2. Preheat the oven to 400°F/200°C/gas 6. Oil a baking sheet. .

  3. Sauté the shallots in 3 tablespoons of oil in a large frying pan over high heat for 5 minutes. Season with salt, pepper, and half the herbs and remove from heat.

  4. Roll the dough out thinly on a lightly floured surface. Use a 2-inch (5-cm) cookie-cutter to cut out rounds.

  5. Place on the baking sheet. Let rise for 10 minutes. Spoon some shallots over each pizza.

  6. Sprinkle with the remaining herbs and drizzle with the remaining oil. Bake for 10-15 minutes, or until golden. Serve hot.
