Prepare the pizza dough and set aside to rise.
Peel the onions and slice thinly.
Cook the
onions with the water, 2 tablespoons of oil, and the
thyme and rosemary in a large frying pan over medium
heat for 5-10
minutes, or until all the liquid has evaporated.
Season with salt, remove
from the heat, and
let cool.
Preheat
the oven to 425°F/220°C/gas 7.
Oil a large
baking sheet.
When the rising time has elapsed, roll the dough out
about 1/8-inch (3-mm) thick and cut into triangles.
Spread the cheese, olives, and onion mixture on each
triangle. Season with pepper and drizzle with the
remaining oil.
Transfer the triangles to the baking sheet and bake
for 10-12
minutes, or until the pizza dough is golden.
Serve hot or at room temperature.
