Pea and Pecorino Ring

 

Ingredients

 

Serve 6-8

  • 1 1/2 tbsp active dry yeast

  • 3/4 cup/180 ml milk, hot

  • 3 1/3 cups/500 g all-purpose/plain flour

  • 1/2 tsp salt

  • 4 large eggs, lightly beaten

  • 2 tbsp granulated sugar

  • 3/4 cup/180 g butter, cut up

  • 1/4 tsp freshly ground pepper

  • 1 3/4 cups/215 g freshly grated

  • Pecorino cheese

  • 2 cups/200 g peas, lightly cooked


Method:

  1. Mix the yeast and milk in a small bowl. Let stand for 15 minutes, until foamy.

  2. Sift the flour and salt into a large bowl and make a well in the center. Mix in the yeast mixture, eggs, sugar, butter, and pepper to make a soft, elastic dough.

  3. Add the Pecorino and peas and knead well. Butter a 10-inch (26-cm) ring mold.

  4. Place the dough in in the ring mold. Let rise in a warm place for about 1 hour.

  5. Preheat the oven to 375°F/190°C/gas 5. Bake for 25-35 minutes, or until well risen and golden brown.

  6. Remove from the oven and let cool for 5 minutes before turning out onto a rack. Slice and serve while still warm.
