Pea and
Pecorino Ring
Ingredients

tbsp active dry yeast

3/4 cup/180
ml milk, hot

3 1/3 cups/500
g all-purpose/plain
flour
-
1/2 tsp salt
-
4 large eggs,
lightly beaten
-
2 tbsp granulated sugar
-
3/4
cup/180 g butter, cut
up
-
1/4 tsp freshly ground
pepper
-
1 3/4 cups/215 g freshly
grated

Pecorino cheese
-
2 cups/200 g peas,
lightly
cooked
Method:

Mix the yeast and milk in
a small bowl.
Let stand
for 15
minutes,
until foamy.

Sift the flour and salt into a
large bowl and make a well in the center. Mix in the
yeast mixture, eggs, sugar, butter, and pepper to make a
soft, elastic dough.

Add the Pecorino and peas
and knead well. Butter a 10-inch (26-cm) ring mold.

Place the dough in in
the ring mold. Let rise in a warm place for about 1
hour.

Preheat the oven to 375°F/190°C/gas
5. Bake
for
25-35 minutes, or until well risen and golden brown.

Remove from the
oven and let cool for 5 minutes before turning out onto
a rack. Slice and serve
while still warm.
