Savory Pie with
Onions
Ingredients

Pastry:
2 1/3 cups/350 g all-purpose
/plain flour
1/4 tsp salt
2 eggs, lightly beaten with 1
tbsp olive oil
Filling:
1 1/2 lb/700 g onions, finely sliced
4 tbsp extra-virgin olive oil
7 oz/200 g Swiss cheese,
such as Gruyere, cut into small cubes
3 eggs, beaten + 1 egg yolk, beaten
1/2 cup/50 g freshly
grated Parmesan cheese
1/2 cupj50 g finely chopped pitted black olives
salt and freshly ground black pepper to taste
Method:
Pastry:
Sift the flour and salt into a medium bowl. Stir in the
egg mixture. Knead until smooth and
elastic. Wrap
in plastic wrap and refrigerate for 30 minutes.
Preheat the oven to 350°F/180°C/gas 4.
Oil a 9-inch (23cm) pie dish.
Filling: Sauté the onions in the oil in a large saucepan
until softened. Roll
the pastry out to
1/4 inch (5 mm) thick and cut out two circles, one
slightly larger.
Use the larger pastry circle to line
the pie dish.
Cover with the Swiss cheese.
Beat the eggs with the Parmesan.
Stir in the onions
and olives and season with salt and pepper. Pour the filling into the pie and cover with the
remaining
pastry. Brush with the egg yolk.
Bake for
30-35
minutes, or until golden.
Serve hot.
