South American Cornmeal Snacks

 

Ingredients

 

Serve 6-8

  • 3 1/3 cups/500 g finely ground cornmeal

  • 1 1/4 cups/150 g freshly grated firm cheese (such as processed Mozzarella)

  • 1 tsp salt

  • 2 cups/500 ml water


Method:

  1. Preheat the oven to 400°F/200°C/gas 6. Oil a baking sheet.

  2. Mix the cornmeal, cheese, salt and enough water in a large bowl to make a soft dough.

  3. Knead for 2-3 minutes until smooth. Cover the dough with a kitchen cloth and let rise for 5 minutes. Brush a griddle or cost-iron frying pan over medium heat.

  4. Cook the dough in the frying pan for 3-4 minutes on each side, or until the south American cornmeal bread are soft inside but have formed a golden crust on the outside. While cooking, keep separating the south American cornmeal bread from the griddle or pan, or they will stick.

  5. Keep warm while you cook the remaining dough. Serve warm.
