Southern Italian Potato Pie

 

Ingredients

 

Serve 6-8

  • 1 quantity Short Crust Pastry With Egg (refer recipe)

  • 2 lb/1 kg potatoes, boiled and mashed

  • 1/2 cup/125 g butter, melted

  • 1 cup/250 ml milk

  • 1 large egg + 1 large egg yolk

  • 1/2 cup/50 g freshly grated Parmesan cheese

  • salt and freshly ground black pepper to taste


Method:

  1. Prepare the pastry and chill in the refrigerator. Preheat the oven to 350°F/180°C/gas 4.

  2. Butter a deep 10-inch (25cm) springform pan. Line with waxed paper. Butter the paper.

  3. Roll the dough out into a disk large enough to cover the bottom and sides of the pan with the edges overlapping.

  4. Mix the potatoes, butter, milk, egg, egg yolk, Parmesan, salt, and pepper in a large bowl.

  5. Spoon the filling mixture into the pastry. Fold the overlapping edges of the dough inward.

  6. Bake for 40-45 minutes, or until golden brown. Serve hot or at room temperature.
