Three Cheese Puff

 

Ingredients

Serve 4-6

  • 5 eggs

  • 1 cup/250 g Ricotta cheese

  • 5 oz/150 g Mozzarella cheese, diced

  • 2 1/2 oz/75 g Parmesan cheese, diced

  • 5 tbsp milk

  • 1/8 tsp freshly grated nutmeg

  • salt to taste

  • 1 lb/500 g frozen puff pastry, thawed


Method:

  1. Preheat the oven to 400°F/200°C/gas 6. Butter and flour a 10-inch (26cm) baking dish.

  2. Beat the eggs, Ricotta, Mozzarella, Parmesan, 4 tablespoons of milk, nutmeg, and salt in a large bowl.

  3. Divide the pastry in two; one piece twice as large as the other. Roll the large piece out thinly and line the pan. Prick all over with a fork.

  4. Pour in the cheese filling. roll out the remaining pastry and cut to fit the pan. Cover the pan, folding back the edges.

  5. Brush with the remaining milk.

  6. Bake for 35-40 minutes, or until golden. Serve hot or at room temperature.
