Toasted Bread with Black Tuscan Kale

 

Ingredients

 

Serve 4

  • 1 head black Tuscan kale, washed, stalked, and coarsely chopped

  • 4 large slices firm-textured bread, such as Italian ciabatta or French loaf

  • 1-2 cloves garlic, peeled and whole

  • salt and freshly ground black pepper to taste

  • 6 tbsp extra-virgin olive oil


Method:

  1. Cook the kale in salted, boiling water in a large deep saucepan for 15-20 minutes, or until tender.

  2. Toast the bread and rub it with the garlic. Arrange the kale on the toasted bread. Season with salt, pepper and a generous drizzling of oil.
